We had the pleasure of meeting Chef Greg during a previous interview where we discussed his incredible talent for pencil drawing. This time, it was exciting to see him in his other element: the kitchen! His passion for cooking is infectious, and he has a knack for making even complex techniques seem effortless. Watching him interact with the students, it’s clear his enthusiasm inspires them as well.

Chef Joan Brady, a former student of Chef Greg’s and a restaurant owner in her own right, now brings her experience to the classroom. She focuses on front-of-house skills, teaching students proper service etiquette and guest presentation. During the meal presentation, Chef Joan worked seamlessly alongside the students, ensuring everything ran smoothly from start to finish.

This beautifully renovated building boasts a top-notch teaching kitchen equipped with everything you need to hone your culinary skills. Here, you’ll gain practical experience in a real-world setting, from menu creation and cost calculations to meal preparation, service, and kitchen clean-up. You’ll even gain hands-on experience waiting tables and serving guests in a fine dining atmosphere, using professional restaurant equipment.

The program emphasizes hands-on learning, with up to 90% of class time spent in the kitchen. This immersive approach allows instructors to closely monitor your technique and ensure proper execution. Students put their learnings into action by hosting public meals, and rotating roles to gain experience in both service and preparation.
